This is a do ahead recipe that I haven't been able to top in the last 10 years. I make this throughout the year. There are never any leftovers.

Ingredients

    white potatoes peeled and cut in half
  • 2
    cloves of garlic, peeled
  • 1
    stick of unsalted butter
  • 1x8 oz
    package of softened cream cheese
  • 1 c
    milk, heated to almost a boil

How to Make Garlic mashed potato casserole

Step-by-Step

  1. Boil the potatoes with the garlic cloves in the water.
    Meanwhile soften the butter and cream cheese in a bowl large enough to add the boiled potatoes to as they finish cooking.Tip:I cover the bowl with a clean kitchen towel to keep the heat in as I add the finished potatoes.
  2. When all the potatoes are cooked (test them with a fork) add them to the bowl on top of the stick of butter and pkg. of cream cheese. Heat the milk in a microwave safe bowl for about 1:20 minutes and add just before blending the whole thing with my hand mixer.
  3. Mix the potatoes,garlic, butter, cream cheese, and milk until of a smooth consistency. Pour into a greased casserole or souffle dish.top with pats of butter and bake for 30 minutes at 350. The top will have a slight crust depending on how much butter is added on top.
