Ingredients

  • 6 tablespoons garlic herb butter, melted and room temperature
  • 2 large cloves garlic, pressed
  • 2 tablespoons olive oil
  • 1/2 teaspoon hot paprika, or to taste
  • 1/2 teaspoon freshly ground black pepper, or to taste (i always use mixed peppercorns)
  • 1 1/2 pounds mixed baby potatoes, washed and halved
  • 1 1/2 tablespoons fresh chopped parsley, for garnish

How To Make garlic herb butter roasted potatoes

  • Step 1
    Preheat oven to 400ºF and line a baking dish with foil that has been lightly greased with cooking spray; set aside.
  • Step 2
    In a small bowl, add melted garlic herb butter, pressed garlic, oil, hot paprika, salt, and pepper; mix well.
  • Step 3
    In another large bowl, add prepared potatoes and pour over the garlic butter mixture; toss to coat.
  • Step 4
    Drop the potato mixture into the prepared baking dish and spread evenly in a single layer.
  • Step 5
    Transfer to the preheated oven and bake for 20 minutes. Carefully flip them and cook for an additional 20 minutes or until tender and golden brown.
  • Step 6
    To make them crispy, turn the broiler on “Low” for 5 minutes, flipping halfway through.
  • Step 7
    Before serving, sprinkle on fresh chopped parsley.
