This is my first posted recipe and since I just made it tonight for us (along with the grilled steak my hubby fixed me for Mother's Day) and as it was so delicious, I wanted to share it. This is not a dish to eat on any kind of diet - which I am on 95% of the time - but it is a wonderful dish for a special day or company. Enjoy - fix it tomorrow night!

6 medium
yukon gold potatoes (sliced thinly)
4 slice
1 medium
onion large diced
1 c
sharp cheddar cheese shredded
1/2 c
sour cream
1 tsp
1 tsp
black pepper

How to Make Frying Pan Loaded Potatoes


  • 1In a large non-stick frying pan cook 4 slices bacon until crisp and set aside leaving fat rendered in the pan.
  • 2Put onions in pan and cook about 5 minutes. Add thinly sliced potatoes, salt & pepper and after mixing them with a wooden spatula put the lid on the pan and cook on medium low heat (stirring often) for about 20 minutes or until potatoes are tender.
  • 3When potatoes are done, add cheese on top and put lid back on pan until cheese melts - about one minute.
  • 4After cheese melts, put 4 dollops of sour cream plus the bacon that you have crumbled on top and serve.
