frying pan loaded potatoes

This is my first posted recipe and since I just made it tonight for us (along with the grilled steak my hubby fixed me for Mother's Day) and as it was so delicious, I wanted to share it. This is not a dish to eat on any kind of diet - which I am on 95% of the time - but it is a wonderful dish for a special day or company. Enjoy - fix it tomorrow night!

Ingredients
- 6 medium yukon gold potatoes (sliced thinly)
- 4 slices bacon
- 1 medium onion large diced
- 1 cup sharp cheddar cheese shredded
- 1/2 cup sour cream
- 1 teaspoon salt
- 1 teaspoon black pepper
How To Make frying pan loaded potatoes

Step 1In a large non-stick frying pan cook 4 slices bacon until crisp and set aside leaving fat rendered in the pan.

Step 2Put onions in pan and cook about 5 minutes. Add thinly sliced potatoes, salt & pepper and after mixing them with a wooden spatula put the lid on the pan and cook on medium low heat (stirring often) for about 20 minutes or until potatoes are tender.

Step 3When potatoes are done, add cheese on top and put lid back on pan until cheese melts - about one minute.

Step 4After cheese melts, put 4 dollops of sour cream plus the bacon that you have crumbled on top and serve.
