fried potatoes and onions
This is the best side dish for a cookout. My mom always made this when we had burgers, so it has been a staple in our house for years. The night I went into labor with my second child, we grilled out burgers, and I fixed these potatoes and onions, along with baked beans. We ate supper, and as I was doing dishes, I realized that I was in labor. When my mom got to the house to babysit my daughter while we went to the hospital, she stated that the onions were what sent me into labor. They smell great while cooking! Who knows, but we got that baby here the next day.

Ingredients
- 4 - 6 potatoes, washed and sliced
- 1/4 cup diced onion
- 1/8 teaspoon garlic
- 1/8 teaspoon salt and pepper
- 1/2 cup vegetable oil
- seasonings of your choice (to taste)
How To Make fried potatoes and onions

Step 1Wash and slice potatoes into bite-sized pieces (slices or wedges). Drain on paper towel.

Step 2Dice onions and put aside.

Step 3Heat oil in large, deep skillet.

Step 4Add onions and potatoes to the oil. Season with garlic.

Step 5Season with salt and pepper.

Step 6Season with garlic powder.

Step 7Add other seasonings, if desired. We always ask for French fry salt at Slim Chickens, and we bring home the little containers with extra salt. I have put it into a shaker canister, and it is great on this dish!

Step 8Cooks potatoes and onions slowly over low-medium heat. Cover skillet with lid to help ensure tenderness. Stir occasionally while cooking.

Step 9Drain on paper towel, and serve immediately.
