I seem to always have some leftover mashed potatoes and never quite know what to do with them. This is a nice recipe to make patties that go well with eggs in the morning.

Ingredients

  • 2 cups leftover garlic mashed potatoes
  • 1 cup mozzarella cheese, shredded
  • 1 large egg, lightly beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper
  • 1 large egg, slightly beaten (for coating)
  • 1 cup soft bread crumbs
  • 1/2 cup canola oil

How To Make fried potato patties

  • Step 1
    Combine first 6 ingredients; shape into 6 patties.
  • Step 2
    Dip patties into egg, and lightly coat with breadcrumbs.
  • Step 3
    Pour oil into a large, heavy skillet. Fry patties in hot oil over medium heat until lightly browned, turning once.
  • Step 4
    Drain on paper towels.
  • Step 5
    NOTE: You can substitute 2 cups cooked, mashed potatoes plus 1/2 teaspoon garlic powder for the garlic mashed potatoes.
