fried potato patties
I seem to always have some leftover mashed potatoes and never quite know what to do with them. This is a nice recipe to make patties that go well with eggs in the morning.

Ingredients
- 2 cups leftover garlic mashed potatoes
- 1 cup mozzarella cheese, shredded
- 1 large egg, lightly beaten
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/4 teaspoon pepper
- 1 large egg, slightly beaten (for coating)
- 1 cup soft bread crumbs
- 1/2 cup canola oil
How To Make fried potato patties

Step 1Combine first 6 ingredients; shape into 6 patties.

Step 2Dip patties into egg, and lightly coat with breadcrumbs.

Step 3Pour oil into a large, heavy skillet. Fry patties in hot oil over medium heat until lightly browned, turning once.

Step 4Drain on paper towels.

Step 5NOTE: You can substitute 2 cups cooked, mashed potatoes plus 1/2 teaspoon garlic powder for the garlic mashed potatoes.
