I have a fresh herb garden and always love to infuse the fresh flavors of my herbs into my cooking. This is an easy way to get the flavor into a great potato side dish.

Ingredients
- 3 large russet potatoes peeled and sliced
- 4 stalks fresh chives
- 4 cloves garlic minced
- 3 sprigs fresh thyme
- 3 sprigs fresh rosemary
- 3 tablespoons olive oil
- - kosher salt
How To Make fresh herbed roasted potatoes

Step 1Line a baking sheet with parchment paper. Place the rounds of potatoes in a single layer. Throw the garlic and fresh herbs over the top of the potatoes.

Step 2Drizzle with olive oil and sprinkle with salt. Bake in preheated oven at 350 degrees for 10 minutes then flip the potatoes and bake 10 more minutes.

Step 3Remove and discard the herbs and serve.
