Ingredients
- 12 ounces fully cooked smoked sausage ( hillshire farms or your favorite brand )
- 1 can ( 16 ounces ) stewed tomatoes
- 1 1/2 cups water
- 1 package frozen cut okra
- 1 medium onion - cut into 12 wedges
- 2 small red cooking apples - cut into 16 wedges
- 2 tablespoons butter - divided
- 12 ounces frozen potaoe wedges or you can cook from scratch, takes more time.
- 1/4 cup vinegar
- 3 tablespoons sugar
- 2 tablespoons caraway seeds
- 2 tablespoons parsley - chopped
- 1 teaspoon red pepper flakes
- - salt to taste

Step 1Place sausage and water in large non stick frying pan, cover tightly and cook over medium heat for 8 minutes, stirring occasionally. Cut onion into 12 wedges, core and cut apples into 16 wedges. Remove sausage to warm platter. Pour off drippings.

Step 2Cook and stir onions and apples in 1 Tablespoon butter in same frying pan for 4 minutes or until apples are just tender. Place okra in frying pan and cook until tender. Remove all to the warm sausage platter.

Step 3Heat remaining butter, and potatoes and cook covered over medium heat until potatoes are tender and golden brown, stirring occasionally. Combine the vinegar, sugar and caraway seeds. Reduce heat, return all to sausage frying pan and cook one more minute or until all is heated through, stirring gently. Sprinkle with parsley. Serves 4 Enjoy
