Ingredients For fireman bob's smoked sausage dinner

  • 12 oz
    fully cooked smoked sausage ( hillshire farms or your favorite brand )
  • 1 can
    ( 16 ounces ) stewed tomatoes
  • 1 1/2 c
    water
  • 1 pkg
    frozen cut okra
  • 1 md
    onion - cut into 12 wedges
  • 2 sm
    red cooking apples - cut into 16 wedges
  • 2 Tbsp
    butter - divided
  • 12 oz
    frozen potaoe wedges or you can cook from scratch, takes more time.
  • 1/4 c
    vinegar
  • 3 Tbsp
    sugar
  • 2 Tbsp
    caraway seeds
  • 2 Tbsp
    parsley - chopped
  • 1 tsp
    red pepper flakes
  • salt to taste

How To Make fireman bob's smoked sausage dinner

    Place sausage and water in large non stick frying pan, cover tightly and cook over medium heat for 8 minutes, stirring occasionally. Cut onion into 12 wedges, core and cut apples into 16 wedges. Remove sausage to warm platter. Pour off drippings.

    Cook and stir onions and apples in 1 Tablespoon butter in same frying pan for 4 minutes or until apples are just tender. Place okra in frying pan and cook until tender. Remove all to the warm sausage platter.

    Heat remaining butter, and potatoes and cook covered over medium heat until potatoes are tender and golden brown, stirring occasionally. Combine the vinegar, sugar and caraway seeds. Reduce heat, return all to sausage frying pan and cook one more minute or until all is heated through, stirring gently. Sprinkle with parsley. Serves 4 Enjoy
