Fat Rascal Cheesy Potatoes
We like these fat rascals with beef, chicken, fish or pork as a side dish.
If we have any left we zap in the microwave and serve with breakfast the next morning.

2 largebaking potatoes, peeled and grated
2 slicebacon, fried and crumbled
2 Tbspsharp cheddar cheese, grated (or cheese of choice)
2 largeeggs, beaten
2 Tbspall-purpose flour
2 Tbspgreen onions, chopped, optional
·kosher salt to taste
·black pepper to taste
·cooking oil, i used peanut oil
How to Make Fat Rascal Cheesy Potatoes
- Peel and grate potatoes; rinse and drain. Blot potatoes with paper towels to remove as much moisture as possible; set aside.
- Fry bacon crip; cool and crumble.
