1First preheat the oven to 350F. Bake the potatoes for about 1 hour or until tender. Let stand for about 5 mins. Cut the potatoes in half lengthwise, scoop out the centers & leave about 1/8 inch thick shells.
2Next mash the potatoes in a medium bowl. Add the cheese,milk, butter, slat & pepper. Then beat with an electirc mixer on medium speed until fluffy. Then stir in the chives & bacon. Spoon evenly into the potatoe shells. Then place each one in a baking dish.
3Then bake for about 30 mins or until heated through. Then garnish with additional chopped chives.
