This is my brother's breakfast before leaving this morning. As a retired Marine, who served our country for 22 years, he has had his share of SPAM and he loves it...He calls this ESP Delite! Eggs, Spam & Potato. Dedicate this one to our miltary by giving this a try. For the ones of you that can't stomach SPAM, substitute HAM. It will be just a great. Happy SPAMMY or HAM MAKING! sw:)

Ingredients

  • 1 can(s)
    spam, lite, sliced
  • 4-8 large
    eggs
  • 1/2 medium
    orange bell pepper, sliced
  • 1/2 medium
    onion, sliced
  • 1 Tbsp
    cilantro, fresh, chopped
  • 1/2 stick
    butter
  • 1 pkg
    brown gravy mix
  • POTATO PANCAKE

  • 1 c
    instant mashed potatoes, cooked
  • 1/4 c
    panko bread crumbs
  • 2-3 Tbsp
    asiago cheese, grated
  • 1 large
    egg
  • ·
    everglades seasoning to taste

How to Make ESP Delite

Step-by-Step

  1. mix potato pancake ingredients in a bowl. in a hot frying pan, add 1/3 butter. spoon in potatoes to make a pancake. fry until golden brown and flip. remove from pan to a warm plate.
  2. to that same pan, 1/3 of butter add veggies and saute until veggies are soft. remove to warm plate
  3. fry spam until golden brown flipping once. remove to warm plate
  4. add remaining butter to a warm large frying pan, fry eggs flip once for over easy (Al' likes his this way)
  5. cook gravy according to package
  6. on a plate, place down potato pancakes, spam veggies, eggs, veggies and drizzle with gravy. garnish with chives.
