This is one of my favorite potato side dishes.
Blue Ribbon Recipe
Delicious, cheesy potatoes that could be served alongside grilled steak or a holiday meal. With their creamy texture, red potatoes are the perfect choice for this side dish. Layered in between slices of potatoes is a creamy and cheesy filling with bits of green onions and smoky bacon for flavor. It's a simple side dish to put together and most of the prep work can be done the night before.

Ingredients
- 2 pounds unpeeled red potatoes
- 1 cup sliced green onions
- 1/3 cup butter
- 2 cups sour cream
- 6 slices crisp-fried bacon, crumbled
- 2 cups shredded sharp cheese
- - salt and pepper, to taste
How To Make elegant potatoes

Step 1Cook the potatoes in enough water to cover in a saucepan just until tender; drain.

Step 2Let stand until cool.

Step 3Slice the potatoes.

Step 4Saute the green onions in the butter in a skillet just until tender-crisp.

Step 5Layer the potatoes 1/2 at a time in a 3-quart baking dish sprayed with nonstick cooking spray.

Step 6Sprinkle half the green onions and bacon.

Step 7Add half the sour cream.

Step 8Add half the cheddar cheese, salt, and pepper.

Step 9Repeat layers.

Step 10Bake at 350 for 20 minutes.
