This is one of my favorite potato side dishes.

Blue Ribbon Recipe

Delicious, cheesy potatoes that could be served alongside grilled steak or a holiday meal. With their creamy texture, red potatoes are the perfect choice for this side dish. Layered in between slices of potatoes is a creamy and cheesy filling with bits of green onions and smoky bacon for flavor. It's a simple side dish to put together and most of the prep work can be done the night before.

Ingredients For elegant potatoes

  • 2 lb
    unpeeled red potatoes
  • 1 c
    sliced green onions
  • 1/3 c
    butter
  • 2 c
    sour cream
  • 6 slice
    crisp-fried bacon, crumbled
  • 2 c
    shredded sharp cheese
  • salt and pepper, to taste

How To Make elegant potatoes

  • Boiling potatoes.

    Cook the potatoes in enough water to cover in a saucepan just until tender; drain.
  • Cooked potatoes cooling.

    Let stand until cool.
  • Cooled potatoes sliced.

    Slice the potatoes.
  • Sauteeing green onions in butter.

    Saute the green onions in the butter in a skillet just until tender-crisp.
  • Layer of potatoes in a baking dish.

    Layer the potatoes 1/2 at a time in a 3-quart baking dish sprayed with nonstick cooking spray.
  • Green onions and bacon sprinkled on the potaotes.

    Sprinkle half the green onions and bacon.
  • Sour cream spread on the potatoes.

    Add half the sour cream.
  • Cheese sprinkled on top.

    Add half the cheddar cheese, salt, and pepper.
  • Layers repeated.

    Repeat layers.
  • Baking the potatoes.

    Bake at 350 for 20 minutes.
