eggs with fried potatoes
This was one of my dad's favorite things to make for supper for him and us kids. Of course his favorite condiment on this was always ketchup. Sooooo good.

Ingredients
- 6 medium russet potatoes
- 1 medium yellow onions
- 1/4 cup vegetable oil
- 1/4 cup finely diced celery
- 1/4 cup diced green onions
- 1 clove garlic
- 6 large eggs
- - salt and pepper to taste
How To Make eggs with fried potatoes

Step 1Peel and small dice potatoes. Put oil in non-stick skillet. Add potatoes, onions, celery, and garlic. Cook until tender and brown. Stir potatoes often. Remove excess oil from pan. Mix eggs all together in a bowl then add to potatoes and cook till eggs are done. Great served with homemade biscuits. NOTE: Remove excess oil before adding the eggs.
