My best friend of 23 years gave me this recipe years ago. We lost my friend Bunny to cancer in 2001. This is a tasty and fast sweet potato recipe. Great for the Thanksgiving table!

Cobblers are a recipe anyone can make and this sweet potato cobbler will quickly become a favorite. The taste of this was unexpected. You almost can't tell it's sweet potatoes except for the hint of earthiness. We loved the prominence of nutmeg's nutty and slightly sweet flavor. Once baked, it's gooey with a slightly crisp topping. Sandy classifies it as a side dish but, it could be a dessert with a scoop of vanilla ice cream.

Ingredients

  • 1 stick butter
  • 1 cup self-rising flour
  • 2 cups granulated sugar, divided
  • 1 cup milk
  • 2 cups sweet potatoes, cooked but firm, peeled, and cubed
  • 1/2 cup light brown sugar
  • 1 1/2 cups hot water
  • 1 teaspoon vanilla extract
  • 1 teaspoon nutmeg

How To Make easy sweet potato cobbler

  • Melt butter in a 9x13-inch baking dish.
