easy sweet potato casserole
I make these for my daughter at every holiday. She and others seem to love them. Hope you do too!

Ingredients
- 1 can large can sweet potatoes or yams
- 2 cups brown sugar, firmly packed
- 1/3 cup white sugar
- 1 cup butter
- 1 tablespoon honey
- 1/2 bag miniature marshmallows
How To Make easy sweet potato casserole

Step 1Drain can of liquid into separate bowl. Take 2 cups of liquid and pour into sauce pan.

Step 2Add butter to the liquid in saucepan to start melting. Once melted, add the sugars.

Step 3Bring to a boil constantly stirring until liquid thickens (can be to your liking, but I prefer semi-thick)

Step 4Pour the drained potatoes into a casserole dish. Add the thickened liquid, mash potatoes into chunks or as small as you prefer. Top with the marshmallows, press into top of potatoes so liquid can get to the mallows.

Step 5Bake at 350 until marshmallows are golden and potatoes are bubbly. Be careful, the marshmallows can burn.

Step 6Once done, take out of oven, let sit for about 5 minutes, then serve.
