easy scalloped potato and pork chop dinner

This is a quick and easy pork chop dish that I love to make ; the pork is fork tender and the potatoes have a taste of the meat...yummy. Serve with a side veggie and dinner is done.

Ingredients

  • 4 - pork chops
  • 1/4 teaspoon salt and pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon sage
  • 1 teaspoon parsley flakes
  • 1 box scalloped potatoes
  • 1 teaspoon onion powder
  • 1/4 cup chopped pimentos ; optional

How To Make easy scalloped potato and pork chop dinner

  • Step 1
    Trim excess fat off of pork chops and melt in a skillet on med-high heat or you can use 2 Tbs. oil. discard browned pieces.(I don't trim cause I like the fat.)
  • Step 2
    Season both sides of chops with the spices or spices of your choice.
  • Step 3
    In the skillet with the melted fat grease ; brown chops on both sides and set aside on a plate when browned.
  • Step 4
    In the same skillet (don't wipe out) empty the box of scalloped potato , spice packet and the amount of water and milk according to the directions on the box.
  • Step 5
    Add pimentos ; optional ; (I have never used the pimentos)
  • Step 6
    Bring potatoes to a boil and stir several times , Place browned pork chops on top of potatoes (including the juice that was on the plate).
  • Step 7
    Cover and reduce heat to simmer ; cook until potatoes are tender and sauce has thickened. ; stirring several times during cooking process.
