I’m from the great state of West Virginia (almost heaven!), where a perfect breakfast comes with a side of breakfast potatoes. I grew up on sliced fried potatoes, but hash browns are now a family favorite. One reason is how quickly they cook. Another reason is how far 2 medium potatoes stretch to feed 4. Blue Ribbon Recipe

An old-fashioned way to make hash browns, how they used to be made before we could buy them in the frozen food aisle. We grated onions with the potatoes and loved the punch of flavor they added. This recipe is a great way to stretch your dollar, and there are no extra preservatives. Two potatoes create a side for about 4 people.

Ingredients

  • 3 tablespoons oil, bacon grease, Crisco, or butter (or a combo)
  • 2 medium potatoes
  • onion, optional
  • green bell pepper (or any color), optional
  • salt and pepper, optional
  • garlic salt or other seasonings, optional
  • shredded cheese, optional

How To Make easy homemade hash browns

  • Heat oil.
    Step 1
    In a large nonstick or well-seasoned cast iron skillet, heat up olive oil (or whatever fat you choose) over medium-high heat.
  • Grate the potatoes.
    Step 2
    In the meantime, get out your box grater, flat grater, or food processor and grate the potatoes.
  • Grate any onion, peppers, or other veggie of your choosing and add to potatoes.

  • Add the potatoes and grated veggies into the skillet and round up the edges. Press down.

    When the oil is hot, add the potatoes and grated veggies into the skillet and round up the edges. Press down on the potatoes to even them out. Wait patiently for the potatoes to cook and brown. Press them down occasionally. Don’t flip them too soon!
  • Flip when browned and crispy.
    Step 5
    When you think they may be brown enough, lift an edge to check. When in doubt, leave them alone for a few more minutes. Then cut them in half with your spatula and flip. Sometimes, the flip goes well, and sometimes not so much. They will still be delicious! Brown the other side. I turn up the heat a little towards the end to make the hash browns more crispy, but watch carefully. (I personally like a few almost burnt edges.) Others like a sprinkling of shredded cheese to melt on top while you’re waiting.
