easy crock pot potato soup

Easy soup recipe that takes just a few ingredients and tastes so good!! I have also used diced potatoes when I didn't have the frozen ones on hand, but they did get a little mushy. Still tasted great!!

Ingredients

  • 1 package 1 30 oz bag of frozen o'brien cut potatoes (or can use frozen shredded hash browns)
  • 3 cans 14 oz cans chicken broth
  • 1 can cream of chicken soup
  • 1/2 cup chopped onion
  • 1/4 teaspoon ground pepper seasoning
  • 1 package cream cheese (do not use fat free - it won't melt!!)

How To Make easy crock pot potato soup

  • Step 1
    Combine all the ingredients in the crock pot EXCEPT the cream cheese. Cook 6-8 hours on low heat.
  • Step 2
    About 1 hour before serving, add the cream cheese and keep heated until thoroughly melted.
  • Step 3
    Serve with cheddar cheese, bacon bits, sour cream dollops, whatever sounds good on top!!
