Easy Cheesy Potato Casserole
The recipe makes a fairly good size casserole and would be a good choice to take to a pot-luck gathering.

1 (30-oz) pkgfrozen shredded hash brown potatoes
1 cupshredded cheddar cheese
10 3/4-oz can(s)condensed cream of potato soup
1/2 cupgreen onion, cut into 1/2-inch pieces
1 Tbspunsalted butter
1 tspchopped garlic
1/2 Tbsplemon juice
1 tspblack pepper
How to Make Easy Cheesy Potato Casserole
- Preheat oven to 350°F. Spray an 8x12-inch (or 2-quart) baking dish with nonstick spray; set aside.
- In large mixing bowl, stir all ingredients together with a wooden spoon until well blended. Transfer mixture to prepared baking dish.
At this step, feel free to add other ingredients you desire, such as crumbled cooked bacon, chopped cooked ham, chopped bell pepper, or finely chopped jalapeno pepper.
- Bake, uncovered, for 1 hour or until the hash browns are thoroughly cooked.
