easy cheesy potato casserole
The really great thing about this dish---I mean, besides the fact that it's quite tasty and so easy to prepare--is that it's so versatile and can be served as a breakfast dish or a dinner side dish. In addition, you can adjust the ingredients to suit your needs. Add your favorite diced chile, or try a different cheese---maybe Swiss or even Pepper Jack for a bit of a "kick". Or chop up some cooked bacon or cooked ham and toss it in for a more filling dish. The recipe makes a fairly good size casserole and would be a good choice to take to a pot-luck gathering.

Ingredients
- 1 (30-oz) package frozen shredded hash brown potatoes
- 1 cup - shredded cheddar cheese
- 10 3/4-oz cans condensed cream of potato soup
- 1/2 cup - milk
- 1/2 cup - green onion, cut into 1/2-inch pieces
- 1 tablespoon unsalted butter
- 1 teaspoon chopped garlic
- 1/2 tablespoon lemon juice
- 1 teaspoon salt
- 1 teaspoon black pepper

Step 1Preheat oven to 350°F. Spray an 8x12-inch (or 2-quart) baking dish with nonstick spray; set aside.

Step 2In large mixing bowl, stir all ingredients together with a wooden spoon until well blended. Transfer mixture to prepared baking dish. At this step, feel free to add other ingredients you desire, such as crumbled cooked bacon, chopped cooked ham, chopped bell pepper, or finely chopped jalapeno pepper.

Step 3Bake, uncovered, for 1 hour or until the hash browns are thoroughly cooked.
