Easy Cheesy Potato Casserole

Vickie Parks

The really great thing about this dish---I mean, besides the fact that it's quite tasty and so easy to prepare--is that it's so versatile and can be served as a breakfast dish or a dinner side dish. In addition, you can adjust the ingredients to suit your needs. Add your favorite diced chile, or try a different cheese---maybe Swiss or even Pepper Jack for a bit of a "kick". Or chop up some cooked bacon or cooked ham and toss it in for a more filling dish.

The recipe makes a fairly good size casserole and would be a good choice to take to a pot-luck gathering.
