easy cheddar potato cakes

I am always looking for quick and easy dinner ideas to feed my busy family. When I stumbled upon this one, I tried it and my family instantly fell in love with these. I add about a 1/4 to 1/2 cup of real bacon bits to the batter... MMM MMM GOOD!!

Ingredients

  • 2 cups instant potato flakes,
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons flour
  • 1/4 cup cornmeal
  • 1 teaspoon seasoning salt
  • 1 teaspoon garlic powder
  • 1/4 cup onions
  • 1/2 teaspoon black pepper
  • 2 cups milk
  • 1 large egg
  • 1/4 cup butter, melted
  • - vegetable oil (for fying)

How To Make easy cheddar potato cakes

  • Step 1
    In a bowl combine dry ingredients and onion. In another bowl mix milk, egg, and melted butter. Whisk until well combined; add to the dry mixture; mix well. Let the mixture sit for 10-12 minutes until liquid is absorbed. Heat oil in skillet over medium heat. Using slightly wet hands, tightly shape into small balls (About 2 TBLS) place into hot oil then press down lightly with back of a spoon. Cook about 3 minutes on each side or until browned. Remove to paper towels to drain. Add more oil as needed.
