If you have kids that don't like veggies, try this one at Easter dinner. The Easter Bunny sells carrots that are yellow & orange at Trader Joes-or just use regular orange ones. This makes a very pretty and colorful side dish for Easter or any dinner.

Blue Ribbon Recipe

These potatoes are nice and creamy with a pop of sweetness from the carrots. We love the added color the carrots give this dish too. This would make a great side dish with any Easter dinner. Test Kitchen Avatar The Test Kitchen

How to Make Easter Bunny Mashed Potatoes

Test Kitchen Tips
Our Trader Joes stopped carrying the suggested carrots so we substituted some of their fresh yellow and orange carrots. It turned out great!

Step-by-Step

  1. Put chopped potatoes & carrots in med/lg saucepan. Cover with warm or hot water and add a pinch of salt.
  2. Bring to a boil. Cook until potatoes are soft enough for a fork to go through easily - 25-35 minutes.
  3. Drain and return to pan. Add sour cream, butter, salt & pepper. Mash with a masher or electric mixer until there are only small pieces of carrots in smooth potatoes.
  4. Serve to family & a bunny if you have one!
If not, invite a bunny to dinner!
