Ingredients
- 30 baby potatoes, scrubbed
- salt and pepper
- 1/3 cup duck fat
- 2 tablespoons hot honey
- 1/2 cup queso fresco, crumbled
How To Make duck fat potatoes with queso fresco and hot honey

Step 1Place the potatoes in a pot with cold salted water. Bring to a boil, reduce to a simmer, and simmer for about 20 minutes.

Step 2Drain the potatoes and let them cool a bit. Smash the potatoes a bit, but don't break them.

Step 3Add the duck fat to a skillet and let it melt and get hot. In batches, add the potatoes and brown them in the duck fat.

Step 4Remove the potatoes and season with salt and pepper.

Step 5Drizzle the hot honey over the potatoes. Top with queso fresco.
