These potatoes are so crispy and great with the spicy honey and creamy queso.

Ingredients

  • 30 baby potatoes, scrubbed
  • salt and pepper
  • 1/3 cup duck fat
  • 2 tablespoons hot honey
  • 1/2 cup queso fresco, crumbled

How To Make duck fat potatoes with queso fresco and hot honey

  • Step 1
    Place the potatoes in a pot with cold salted water. Bring to a boil, reduce to a simmer, and simmer for about 20 minutes.
  • Step 2
    Drain the potatoes and let them cool a bit. Smash the potatoes a bit, but don't break them.
  • Step 3
    Add the duck fat to a skillet and let it melt and get hot. In batches, add the potatoes and brown them in the duck fat.
  • Step 4
    Remove the potatoes and season with salt and pepper.
  • Step 5
    Drizzle the hot honey over the potatoes. Top with queso fresco.
