Ingredients
- 3 pounds (9 medium) potatoes
- 3/4 cup milk
- 1/2 cup heavy cream
- 1/2 cup butter
- 1 teaspoon salt
- 1/8 teaspoon pepper
How To Make do ahead mashed potatoes

Step 1Cut into large pieces. Add potato pieces to boiling water and reduce heat and cook covered for 20 to 25 minutes; drain. Shake pan gently over low heat to dry potatoes.

Step 2Heat milk, heavy cream, butter, salt and pepper over medium-low heat until butter is melted. Take out 1/4 cup of the milk mixture; cover and refrigerate.

Step 3Add remaining milk mixture in small amounts to potatoes in medium bowl, mashing with potato masher after each addition. Beat until potatoes are light and fluffy.

Step 4Spoon potatoes into a greased 2 quart casserole. Bake immediately or cover and refrigerate up to 24 hours. Pour reserved milk mixture over potatoes. Bake, uncovered at 350 degrees for 40 to 45 minutes. Just before serving, stir potatoes.

Step 5If you love garlic, peel and finely chop 1 to 2 cloves before mashing. Use a handheld potato masher for the fluffiest potatoes.
