Dijon Mashed Potatoes
1 lbyukon gold potatoes
·salt to taste
1/2 cmilk or half & half (half & half makes them creamier
2 Tbspunsalted butter
1 pinchground nutmeg
1 Tbspwhole grain dijon mustard
·freshly ground pepper, to taste
How to Make Dijon Mashed Potatoes
- Fill large saucepan halfway with water. Bring to a boil. Add salt.
- While waiting for water to boil, peel and slice potatoes. Add to water.
- Cook about 15 minutes and drain when done. Put back in pan, add milk, butter and nutmeg. Mash until smooth. Add mustard. Mix well. Add salt & pepper if needed, to taste
