diced bacon potatoes
Darlene came to our house for a BBQ, and brought this. Of course, I added the bacon and onions...there is something wonderful about these potatoes, and leftovers can always be reheated with eggs for breakfast in the morning, providing of course, that you have leftovers!

Ingredients
- - bacon, cooked and crumbled
- 1 - onion, diced into small pieces
- - olive oil
- - potatoes, peeled, diced small
- - salt and pepper
- - basil
- - oregano
- - parsley
- - minced garlic
How To Make diced bacon potatoes

Step 1Cook and crumble bacon. Dice onion into the small pieces. Put olive oil into the bottom of a covered casserole, then combine potatoes, bacon, onion, salt, pepper, basil, oregano, parsley and minced garlic to taste. Bake at 350 degrees until potatoes are tender.

Step 2Please note: this recipe does not have amounts, as you can make it to serve as many or as few people as you wish. Dice the potatoes and onions fine, it should look like diced potatoes you get in the fridge for breakfast. You can make them bigger, but they won't be as nicely crispy.
