i'm not a big mayo eater so needed something different...this was it...

Ingredients

  • 3-4 medium potatoes
  • 4 - hard boiled eggs
  • 1/2 medium red bell pepper
  • 1 small yellow onion
  • 1 1/2 cups light sour cream
  • 2 tablespoons yellow mustard
  • 2-4 tablespoons fat free 1/2&1/2
  • 1/2 teaspoon fresh ground black pepper
  • 1 teaspoon seasoned salt
  • 2 tablespoons dried celery leaves....crushed
  • 1/2 cup sweet pickle relish...drained well
  • 2 tablespoons dried green onion...divided
  • 1 teaspoon garlic powder

How To Make diane's potato salad

  • Step 1
    prick potatoes several times put in microwave and cook til fork tender...5-8 min...cool jus enough so u can peel an chop them into large bowl
  • Step 2
    boil eggs... peel... add to potatoes
  • Step 3
    whill potatoes an eggs are cooking....chop onions an bell peppers..
  • Step 4
    use remain ingredients and made sauce[only use 1 T dried green onions]
  • Step 5
    toss all together[while eggs an potatoes are still warm]...sprinkle the last 1 t green onions on top... i save 1 egg an 1/2 that for the top too
