A knish is a piece of dough stuffed with potato, meat or cheese, then baked or fried. The word from Yiddish and many times from the Jewish faith. I know mine is my own creation and wouldn't fit because of the bacon. You can stuff the dough with almost anything you like, from veggies, to meat, to cheese to even dessert types. I hope you like my version of this delicious side dish. I looked at many recipes and developed this one of my own.

Who wouldn't love loaded mashed potatoes inside a buttery crescent roll? Packed with cheese and bacon this knish recipe is easy to make. It's not a traditional knish filling but it's quite tasty. A great side dish or snack.

Ingredients For delish knish

    potatoes (medium to large)
  • 5 slice
    bacon, cooked and crumbled
  • 6
    scallions, diced
  • 1 c
    sour cream
  • 1/4 stick
    butter
  • 2 pkg
    crescent roll sheets
  • garlic salt
  • pepper
  • parsley flakes
  • 1 c
    cheddar cheese, shredded
  • Parmesan cheese
  • 1
    egg beeten
  • milk

How To Make delish knish

  • Cooked potatoes in a pot.

    Peel and cut potatoes. Cook in a pot of boiling water until soft enough to mash. Once cooked, drain water and return potatoes to the pot.
  • Butter, sour cream, a dollop of milk, bacon bits, and green onion added to potatoes.

    Mash using butter, sour cream, and a dollop of milk. Mix bacon bits and onion into the mashed potatoes. Salt and pepper to taste.
  • Crescent dough cut into four rectangles.

    Roll out the dough so it lies flat. Use a pizza cutter to cut into 4 pieces cutting down the middle in each direction.
  • Cheese and mashed potatoes on top of the crescent dough.

    Place a small amount of cheese in the center of the dough. Then a large spoon full of mashed potatoes on top.
  • Dough folded and sealed.

    Fold dough over top pinching ends together. Place crease side down on greased cookie sheet.
  • Pepper, garlic salt, parsley flakes, and Parmesan cheese sprinkled on top.

    Brush with egg wash. Then sprinkle with pepper, garlic salt, parsley flakes, and Parmesan cheese. Bake at 350 for 20 min or until golden.
