Ingredients
- 1 pound potatoes (gold), cut into 3/4 inch pieces
- 1 cup sundried tomato halves (1 1/2 oz)
- 1 cup sliced, seedless cucumber
- 1/2 cup sliced red onion
- 1 cup crumbled feta cheese (4 oz)
- 1/2 cup pitted greek olives or pitted ripe olives
- FOR THE DRESSING
- 1/4 cup olive oil
- 1/4` cup water
- 2 1/2 tablespoons lemon juice
- 1 large clove garlic, pressed
- 1 tablespoon fresh oregano or 1 tsp. dried oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
How To Make delicious greek potato salad

Step 1In a saucepan, cook potatoes in boiling water over medium heat until just tender (10-15 minutes). Drain and set aside.

Step 2In a bowl, cover tomatoes with boiling water and allow to sit 10 minutes. Thoroughly drain the tomatoes and pat dry with paper towels.

Step 3Add potatoes, tomatoes, and cucumber to dressing, toss to coat. Mound potato/tomato mixture on a platter and arrange onion, cheese and olives on top.

Step 4Dressing: Whisk dressing ingredients until thoroughly combined.
