Ingredients For delicious greek potato salad

  • 1 lb
    potatoes (gold), cut into 3/4 inch pieces
  • 1 c
    sundried tomato halves (1 1/2 oz)
  • 1 c
    sliced, seedless cucumber
  • 1/2 c
    sliced red onion
  • 1 c
    crumbled feta cheese (4 oz)
  • 1/2 c
    pitted greek olives or pitted ripe olives
  • FOR THE DRESSING
  • 1/4 c
    olive oil
  • 1/4` c
    water
  • 2 1/2 Tbsp
    lemon juice
  • 1 lg
    clove garlic, pressed
  • 1 Tbsp
    fresh oregano or 1 tsp. dried oregano
  • 1 tsp
    salt
  • 1/2 tsp
    pepper

How To Make delicious greek potato salad

    In a saucepan, cook potatoes in boiling water over medium heat until just tender (10-15 minutes). Drain and set aside.

    In a bowl, cover tomatoes with boiling water and allow to sit 10 minutes. Thoroughly drain the tomatoes and pat dry with paper towels.

    Add potatoes, tomatoes, and cucumber to dressing, toss to coat. Mound potato/tomato mixture on a platter and arrange onion, cheese and olives on top.

    Dressing: Whisk dressing ingredients until thoroughly combined.
