Not your typical potato salad -- enjoy this Greek version.

Ingredients

  • 1 pound potatoes (gold), cut into 3/4 inch pieces
  • 1 cup sundried tomato halves (1 1/2 oz)
  • 1 cup sliced, seedless cucumber
  • 1/2 cup sliced red onion
  • 1 cup crumbled feta cheese (4 oz)
  • 1/2 cup pitted greek olives or pitted ripe olives
  • FOR THE DRESSING
  • 1/4 cup olive oil
  • 1/4` cup water
  • 2 1/2 tablespoons lemon juice
  • 1 large clove garlic, pressed
  • 1 tablespoon fresh oregano or 1 tsp. dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How To Make delicious greek potato salad

  • Step 1
    In a saucepan, cook potatoes in boiling water over medium heat until just tender (10-15 minutes). Drain and set aside.
  • Step 2
    In a bowl, cover tomatoes with boiling water and allow to sit 10 minutes. Thoroughly drain the tomatoes and pat dry with paper towels.
  • Step 3
    Add potatoes, tomatoes, and cucumber to dressing, toss to coat. Mound potato/tomato mixture on a platter and arrange onion, cheese and olives on top.
  • Step 4
    Dressing: Whisk dressing ingredients until thoroughly combined.
