These are great tasting Potato Pancakes and very easy to make.

Ingredients

  • 3 - potatoes, russets - pealed and grated
  • 1 - egg
  • 2 tablespoons all purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup carrots, grated ( 1 large)
  • 1 1/2 cups zucchini - grated (2 small)
  • 1/2 cup low fat sour cream or plain yogurt
  • 2 tablespoons fresh basil (finely chopped)
  • 1 tablespoon chopped chives

How To Make delicate potato pancake

  • Step 1
    Preheat oven to 425 degrees
  • Step 2
    Wrap grated potatoes in several layers of paper towels and squeeze to remove excess moisture.
  • Step 3
    Beat egg, flour, salt and pepper n a large bowl. Add potatoes, carrot and zucchini; mix well
  • Step 4
    Oil 2 nonstick baking sheets.
  • Step 5
    Place vegetable mixture by heaping spoonfuls onto baking sheets; flatten slightly.
  • Step 6
    Bake 8 to 15 minutes until bottoms are browned. Turn; bake 5 to 10 minutes more.
  • Step 7
    Stir together sour cream or plain yogurt and herbs; serve with warm pancakes.
