One of my dance club friends who is a very good cook, gave this recipe to me. Everytime I prepare this dish, I think of her and how beautifully she and her husband dance our favorite specialty dance called the 'Night Club Two Step'.

Ingredients
- 1 pound package frozen diced hashbrowns (16 oz.)
- 1 - small onion, chopped
- 1 can cream of mushroom soup
- 1/2 can water
- 8 ounces cream cheese, softened
- 1/4 pound butter (1 cube)
- 1/2 - boneless chicken breast, cooked and diced
- --- - salt and pepper to taste
- --- - grated cheddar cheese
How To Make debbie's potato casserole

Step 1Saute onions in butter. Mix the soup with 1/2 can water & whisk together with the cream cheese. Add to the onions in skillet, stir until melted and smooth. Add the potatoes and chicken.

Step 2Pour into a buttered 8 X 11 baking dish and bake at 350 degrees for 45 - 50 minutes. The top should be nicely browned. Top with cheddar cheese, return to the oven until cheese is melted, about 5 minutes.
