Debbie's Potato Casserole
1 lbpackage frozen diced hashbrowns (16 oz.)
1small onion, chopped
1 can(s)cream of mushroom soup
8 ozcream cheese, softened
1/4 lbbutter (1 cube)
1/2boneless chicken breast, cooked and diced
---salt and pepper to taste
---grated cheddar cheese
How to Make Debbie's Potato Casserole
- Saute onions in butter. Mix the soup with 1/2 can water & whisk together with the cream cheese. Add to the onions in skillet, stir until melted and smooth. Add the potatoes and chicken.
- Pour into a buttered 8 X 11 baking dish and bake at 350 degrees for 45 - 50 minutes. The top should be nicely browned. Top with cheddar cheese, return to the oven until cheese is melted, about 5 minutes.
