  • 2 1/2 c
    instant potato flakes
  • 1/2 c
    lite mayonnaise
  • 2 1/2 c
    boiling water
  • 3-4 Tbsp
  • ·
    salt & pepper to taste
  • 3 Tbsp
    non-dairy coffee creamer
  • 1 1/8 c
    shredded mozzarell cheese
  • 1 c
    lite sour cream
  • 1/4 tsp
    garlic powder
  • 1/8 tsp
    onion powder
  • 1 Tbsp
  • 1 c
    crushed corn flakes

How to Make Crusty Potato Casserole


  1. Preheat oven to 400 degrees F. In a 2 quart casserole, combine all ingredients except 1 tablespoon of butter and corn flakes.
  2. Mix ingredients thoroughly. Sprinkle corn flakes on top of potatoes. Scatter small pieces of remaining 1 tablespoon of butter around on corn flakes. Bake till golden brown. Serve hot.
