Ingredients

  • 2 1/2 cups instant potato flakes
  • 1/2 cup lite mayonnaise
  • 2 1/2 cups boiling water
  • 3-4 tablespoons butter
  • - salt & pepper to taste
  • 3 tablespoons non-dairy coffee creamer
  • 1 1/8 cups shredded mozzarell cheese
  • 1 cup lite sour cream
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1 tablespoon butter
  • 1 cup crushed corn flakes

How To Make crusty potato casserole

  • Step 1
    Preheat oven to 400 degrees F. In a 2 quart casserole, combine all ingredients except 1 tablespoon of butter and corn flakes.
  • Step 2
    Mix ingredients thoroughly. Sprinkle corn flakes on top of potatoes. Scatter small pieces of remaining 1 tablespoon of butter around on corn flakes. Bake till golden brown. Serve hot.
