These are my husband's favorite potatoes,he loves them with a grilled steak,he loves vegetables but he also loves his meat and potatoes! So do the boys.My oldest son is going vegetarian but he told me today,he"s jonesing for a chili dog with salsa! MMmm! I used to love a hot dog like that too,funny when I crave meat,that's what I want a hot dog or a turkey sandwich! he says he's going to stay strong! I like to make these using small red potatoes,but you can use any small potato.

Ingredients
- - 16 small red potatoes
- - olive oil
- - oregano
- - salt and pepper ,to taste
- - parsley,minced
- - sour cream,optional
How To Make crispy potatoes

Step 1Cook the potatoes in a pot of salted water until you can pierce them with a fork. Remove them from the pot one and cool.(I put them on a rack so they dry. Heat your oven to 400 degrees. Place potatoes on a baking sheet leaving enough room between them to spread. With the bottom of a glass, smash them against the baking sheet. Drizzle all the potatoes with some olive oil. Sprinkle salt, a little bit of oregano and black pepper. Bake for about 20 minutes until the potatoes are crispy.Sprinkle with parsley. Serve with a dollop of sour cream,optional,but delicious.
