Ingredients
- 3 1/2 pounds russet potatoes
- 4 small shallot sliced thin
- 3 tablespoons olive oil
- 3 tablespoons butter
- - salt and pepper
- 6 sprigs thyme
- 6 slices bacon cooked and crumbled
How To Make crispy potato roast

Step 1Preheat oven 375 degrees. Melt the butter and add the oil. Set aside.

Step 2Peel the potatoes and slice them thinly but keep them together. Grease a baking dish with some of the butter oil mixture. Place the potatoes horizontal in the dish. Wedge the shallots throughout the potato slices. Season with salt and pepper.

Step 3Pour the remaining butter oil over potatoes. Sprinkle with bacon and thyme leaves. Bake about 30 minutes.
