Ingredients

3 1/2 lb
russet potatoes
4 small
shallot sliced thin
3 Tbsp
olive oil
3 Tbsp
butter
salt and pepper
6 sprig(s)
thyme
6 slice
bacon cooked and crumbled

How to Make Crispy Potato Roast

Step-by-Step

  • 1Preheat oven 375 degrees. Melt the butter and add the oil. Set aside.
  • 2Peel the potatoes and slice them thinly but keep them together. Grease a baking dish with some of the butter oil mixture. Place the potatoes horizontal in the dish. Wedge the shallots throughout the potato slices. Season with salt and pepper.
  • 3Pour the remaining butter oil over potatoes. Sprinkle with bacon and thyme leaves. Bake about 30 minutes.
