Ingredients
- 2 large russet potatoes , peeled and grated, about 2lbs
- 1 large onion, chopped finely
- 3 tablespoons fresh parsley, minced
- 2 eggs, beaten
- 3-4 tablespoons flour, as needed
- salt and pepper, to taste
How To Make crispy potato fritters

Step 1Place grated potatoes in a dish towel and pat completely dry.

Step 2Mix potatoes, eggs, onions, parsley together. Add enough flour to make the mixture stick together.

Step 3Fry the mixture in hot oil approx. 350 F until golden brown on both sides.

Step 4Drain on paper towels
