Ingredients

3 lb
yukon gold potatoes, peeled and cubed
1 c
milk
2 Tbsp
butter
1/3 c
mascarpone cheese
1/2 tsp
salt and pepper
3 Tbsp
chives

How to Make Creamy Whipped Potatoes With Chives

Step-by-Step

  • 1Bring a large pot of salted water to a boil, add potatoes and cook 10-12 minutes or until tender. Drain potatoes then add back to the pot.
  • 2In the meantime, heat milk and butter in a small saucepan over medium heat.
  • 3With a hand held mixer at it's lowest speed, slowly add the hot milk mixture to the potatoes.
  • 4Add the mascarpone cheese, salt and pepper and then use the hand blender on low to combine.
