How to Make Creamy Whipped Potatoes With Chives
- Bring a large pot of salted water to a boil, add potatoes and cook 10-12 minutes or until tender. Drain potatoes then add back to the pot.
- In the meantime, heat milk and butter in a small saucepan over medium heat.
- With a hand held mixer at it's lowest speed, slowly add the hot milk mixture to the potatoes.
- Add the mascarpone cheese, salt and pepper and then use the hand blender on low to combine.
