Ingredients
- 3 pounds yukon gold potatoes, peeled and cubed
- 1 cup milk
- 2 tablespoons butter
- 1/3 cup mascarpone cheese
- 1/2 teaspoon salt and pepper
- 3 tablespoons chives
How To Make creamy whipped potatoes with chives

Step 1Bring a large pot of salted water to a boil, add potatoes and cook 10-12 minutes or until tender. Drain potatoes then add back to the pot.

Step 2In the meantime, heat milk and butter in a small saucepan over medium heat.

Step 3With a hand held mixer at it's lowest speed, slowly add the hot milk mixture to the potatoes.

Step 4Add the mascarpone cheese, salt and pepper and then use the hand blender on low to combine.
