My father would make these delicious potatoes as a special brunch treat.

Ingredients

  • 8 ounces reduced-fat cream cheese, softened
  • 1/2 cup lite sour cream
  • 1 cup lower-sodium chicken broth
  • 3 pounds red potatoes, thinly sliced
  • 1 - 6 oz pkg smoked ham, chopped
  • 8 ounces reduced-fat, shredded cheddar cheese
  • 1 cup frozen peas.

How To Make creamy scalloped potatoes

  • Step 1
    Heat oven to 350. Spray a 9 x 13" casserole pan w/ cooking spray.
  • Step 2
    In lg bowl, mix cream cheese, sour cream and broth until blended. Add potatoes, ham, peas and 1-3/4 cup shredded cheddar cheese.
  • Step 3
    Spoon mix into casserole pan. Top w/ remaining cheese. Bake 1 hr, or until potatoes are tender.
