creamy corn "chowder"

I wanted to find a way to make more corn dishes becaause my daughter loves it. This is very easy and comforting.

Ingredients

  • 1/4 cup chopped onion (i use frozen)
  • 1 tablespoon butter or oil
  • 1/4 cup ham, finely diced (use more if you like)
  • 1-2 - potatoes, cut into small cubes
  • 14 1/2 ounces can of white corn, drained
  • 14 1/2 ounces can creamed white creamed corn, undrained
  • 1 can evaporated milk, fat free
  • GARNISH
  • - shredded cheese and chopped green onions,and bacon
  • - you can use bacon in place of the ham, just chop it and fry it up with the onions.

How To Make creamy corn "chowder"

  • Step 1
    Spray a large sauce pan with a bit of Pam. Melt butter, or add oil and cook onion for about 3 min. Add the ham and cook 3 more min.
  • Step 2
    Meanwhile cover potatoes in water and cook in the microwave for 5 min.; drain.
  • Step 3
    Add all the ingredients, along with the potatoes to the pan. Bring to a boil, then turn down to low and simmer for 30 minutes. You may want to thicken with flour or add milk to get the consistency you like.
  • Step 4
    Serve with the garnish on top if desired.
