This rich, creamy, and cheesy potato recipe came from a friend at church several years ago. Everyone seems to love it. When you want a special potato dish this one is a great choice. Best of all it is not hard to make.

Ingredients

  • 3-4 pounds red potatoes, quartered but not peeled
  • 6 ounces cream cheese, at room temperature
  • 1/2 cup butter, room temperature
  • 1/2 cup half and half or heavy cream
  • 1 medium green bell pepper, chopped
  • 1 medium red bell pepper, chopped
  • 4 - chopped green onions (use both green and white parts)
  • 1/2 teaspoon sea salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper (or to taste)
  • 3/4 cup shredded sharp cheddar cheese, divided
  • 1/2 cup grated parmesan cheese, divided

How To Make creamy calico mashed potatoes

  • Step 1
    Place potatoes in a large saucepan. Cover with water. Bring to a boil. Reduce heat to a simmer. Cover and cook for 10-15 minutes or until tender. Drain. In a large bowl, mash the potatoes.
  • Step 2
    Add the cream cheese, butter and cream. Beat until blended. Stir in the green pepper, red pepper, onions, salt and pepper. Stir in 1/2 cup cheddar cheese and 1/4 cup Parmesan cheese.
  • Step 3
    Spoon into a greased 11 by 7 inch baking dish. Sprinkle with remaining cheeses. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through.
