This rich, creamy, and cheesy potato recipe came from a friend at church several years ago. Everyone seems to love it.

When you want a special potato dish this one is a great choice. Best of all it is not hard to make.

Ingredients

3-4 lb
red potatoes, quartered but not peeled
6 oz
cream cheese, at room temperature
1/2 c
butter, room temperature
1/2 c
half and half or heavy cream
1 medium
green bell pepper, chopped
1 medium
red bell pepper, chopped
4
chopped green onions (use both green and white parts)
1/2 tsp
sea salt (or to taste)
1/4 tsp
freshly ground black pepper (or to taste)
3/4 c
shredded sharp cheddar cheese, divided
1/2 c
grated parmesan cheese, divided

How to Make Creamy Calico Mashed Potatoes

Step-by-Step

  • 1Place potatoes in a large saucepan. Cover with water. Bring to a boil. Reduce heat to a simmer. Cover and cook for 10-15 minutes or until tender. Drain. In a large bowl, mash the potatoes.
  • 2Add the cream cheese, butter and cream. Beat until blended. Stir in the green pepper, red pepper, onions, salt and pepper. Stir in 1/2 cup cheddar cheese and 1/4 cup Parmesan cheese.
  • 3Spoon into a greased 11 by 7 inch baking dish. Sprinkle with remaining cheeses. Bake, uncovered, at 350 degrees for 20-25 minutes or until heated through.
