cranberry sweet potatoes

This was on the back of Kraft miniature marshmallows but I have made a few changes. I never would eat sweet potatoes at Thanksgiving until I tried these. The cranberries give a wonderful tartness . I do not use the miniature marshmallows but just add them the about 5 minutes before taking out of the oven.

Ingredients
- 1 cup all purpose flour
- 1 cup brown sugar, firmly packed
- 1 cup oats, regular
- 2 teaspoons cinnamon, ground
- 2/3 cup butter, cold
- 1 cup pecans, in pieces
- 2 cans 17oz sweet potatoes
- 2 cups cranberries, fresh
How To Make cranberry sweet potatoes

Step 1Combine flour, oats, brown sugar and cinnamon. Cut in cold butter until it resembles coarse meal. Stir in pecans and set mixture aside. (Two cups of this mixture will be stirred into the sweet potatoes)

Step 2Drain the sweet potatoes and cut into 1 to 2 inch pieces. Place the sweet potatoes into a large bowl and toss them with 2 cups of the above mixture. Stir in 2 cup of fresh cranberries that have been washed and allowed to dry.

Step 3Spray a 9 x 13 inch baking dish with a non-stick spray. Press the sweet potato mixture into the pan and top with rest of the crumb mixture .

Step 4Bake 45 min to an hour at 350 degrees. Until heated through. Let set 20 minutes before serving.
