Ingredients
- 4 - medium sweet potatoes
- 1 cup fresh cranberries
- 1/2 cup apple juice or apple cider
- 1/2 cup brown sugar
- 3 tablespoons lemon juice
- 1/3 cup honey
- 1 tablespoon melted butter
How To Make cranberried sweet potatoes

Step 1Cut sweet potatoes in half and boil until just soft. Cool in cold water and peel off skins. Place in a baking dish sprayed with PAM.

Step 2Combine cranberries, apple juice and brown sugar in a saucepan. Cook for 25 - 30 minutes. Mix in lemon juice and spoon over potatoes.

Step 3Combine honey with melted butter and pour over sauce.

Step 4Bake in pre-heated 325° oven for 20 minutes or until thoroughly hot.
