My family loves it and they loves breakfast for supper and so do I. It is so simple to make it. They are so great and tasty.

Ingredients

  • 1/2 pound bacon, chopped
  • 3 cups potatoes, peeled, cooked and diced
  • 1 cup tomato, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1 teaspoon garlic, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups shredded sharp cheddar cheese
  • 8 - eggs

How To Make country-style supper skillet

  • Step 1
    Cook bacon over medium heat in a laaarge deep skillet until crisp, partially drain drippings, reserving some in skillet. Add vegetables, garlic, salt and pepper, saute in pan drippings about 5 minutes or until tender. Sprinkle with cheese. Make 8 wells for eggs; crack eggs into wells about 2 inches apart. Reduce heat; cover and cook eggs over medium heat 10 to 12 minutes or to desired degree of doneness.
