While a potato recipe is usually a side dish, this one is so packed full it is a meal in and of itself.

For an added twist, fry an egg and put on top.

Ingredients

  • 2 lb
    red potatoes
  • 1 c
    red pepper
  • 1 c
    yellow peppers
  • 1 c
    orange bell pepper
  • 1/2 c
    red onion
  • 1/2 c
    white onions
  • 8 slice
    sausage
  • 8 slice
    bacon
  • 1 tsp
    garlic powder
  • 3 Tbsp
    butter
  • 3 Tbsp
    olive oil, extra virgin
  • 1 tsp
    fresh chives (chopped)
  • 2 tsp
    smoked paprika

How to Make Country style potatoes

Step-by-Step

  1. Peel and cube potatoes
  2. Cook bacon and sausage then set aside.
  3. In a skillet, add olive oil and butter over medium heat. Add in onions and peppers. Cook about 5 minutes stirring often.
  4. Add potatoes and spices, cover and cook for about 5 minutes stirring often.
  5. Add bacon (broken into pieces) and sausage (broken into pieces) cover and cook for 5 minutes.

    Check potatoes and remove when cooked.
  6. Salt and pepper to taste.
