While a potato recipe is usually a side dish, this one is so packed full it is a meal in and of itself. For an added twist, fry an egg and put on top.

Ingredients

  • 2 pounds red potatoes
  • 1 cup red pepper
  • 1 cup yellow peppers
  • 1 cup orange bell pepper
  • 1/2 cup red onion
  • 1/2 cup white onions
  • 8 slices sausage
  • 8 slices bacon
  • 1 teaspoon garlic powder
  • 3 tablespoons butter
  • 3 tablespoons olive oil, extra virgin
  • 1 teaspoon fresh chives (chopped)
  • 2 teaspoons smoked paprika

How To Make country style potatoes

  • Step 1
    Peel and cube potatoes
  • Step 2
    Cook bacon and sausage then set aside.
  • Step 3
    In a skillet, add olive oil and butter over medium heat. Add in onions and peppers. Cook about 5 minutes stirring often.
  • Step 4
    Add potatoes and spices, cover and cook for about 5 minutes stirring often.
  • Step 5
    Add bacon (broken into pieces) and sausage (broken into pieces) cover and cook for 5 minutes. Check potatoes and remove when cooked.
  • Step 6
    Salt and pepper to taste.
