My husband doesn't eat breakfast during the week; however, he does love it on weekends. This recipe, fixed with bacon and eggs starts his day off with a smile.

Ingredients
- 2 pounds unpeeled potatoes, washed
- 1/2 cup onions, chopped
- 2 tablespoons butter
- 1 cup green bell pepper, chopped
- 1 teaspoon paprika, sweet mild
- 1 teaspoon lowry's seasoned salt
- 1/2 teaspoon black pepper, to taste
- - tabasco sauce, to taste
- 3/4 cup monterey jack cheese, grated
- 3/4 cup cheddar cheese, grated
How To Make cottage potatoes

Step 1Cut washed potatoes into 3/4-inch cubes; boil until soft. Preheat oven to 350°F.

Step 2In skillet, sauté onions in butter until translucent. Add bell pepper and sauté until soft. Transfer to a bowl and mix with potatoes, paprika, seasoned salt, pepper, and several drops of Tabasco.

Step 3Put mixture in greased 8" x 11" oven-proof dish and bake until potatoes begin to brown, about 20 minutes.

Step 4Remove from oven and sprinkle with both cheeses. Return to oven briefly until cheese melts.

Step 5NOTE: When I make this, I cut the ingredients in half and use a 2-quart casserole dish to bake it.
