I learned to make this at a young age from my mom. My sister's fiance' called me from the army and had me send him the recipe. It's so simple to make and very satisfying.

  • 1 can(s)
    12 ounce libby's corned beef
  • 7 medium
    russet potatoes, boil with 1/2 tsp salt or 3 large potatoes
  • 1/2 stick
  • ·
    black pepper, coarsely ground, to taste
  • ·
    salt, to taste

How to Make Corned Beef Hash


  1. Peel potatoes and cut into chunks. Boil in water with 1/2 tsp. salt in saucepan 25-30 minutes or until soft. Drain water.
  2. Add butter and corned beef. Stir until well combined.
  3. Add salt and pepper to taste. Serve hot.

    Note: Great with green beans and corn on the cob.
