Ingredients
- 1/2 cup butter
- 1/2 cup chopped onion
- 16 ounces frozen hash brown potatoes
- 1 can cream of mushroom soup
- 1 - undiluted soup can of milk
- 1 cup shredded cheddar cheese
- 1 small green pepper, cut into strips
- 2 tablespoons pimento
- pinch pepper
- 1 cup cheese cracker crumbs, divided
How To Make confetti scalloped potatoes

Step 1In a skillet, melt butter over medium heat.

Step 2Saute onion until tender.

Step 3Stir in potatoes, soup and milk.

Step 4Add cheese, green pepper, pimento, pepper and 1/2 cup of the tops with remaining crumbs.

Step 5Bake at 375 for 35-40 minutes.
