Ingredients

  • 3 pounds potatoes, peeled and sliced 1/4 inch thick
  • 1 - large onion, diced
  • 1 jar medium jar chopped pimentos, drained
  • 1 - green pepper, diced
  • 1 cup shredded american cheese
  • 1 can cream of mushroom soup
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt

How To Make confetti scalloped potatoes

  • Step 1
    Arrange several layers of sliced potatoes, diced onions, chopped pimentos, diced green peppers and shredded cheese, ending with a layer of sliced potatoes and cheese on top.
  • Step 2
    Combine 1 cup hot water with the cream of mushroom soup, celery salt, salt and pepper. Pour over the potatoes.
  • Step 3
    Oven to 350 degrees. COVER and bake for 1 and 1/2 to 2 hours until tender and thickened.
