Golden crispy French fries fried in a heavy pot on top of the stove, using cold canola oil, or your favorite frying oil for high temperature. These fries do not hold oil or get soggy when fried this way. You and your family are going to love this easy recipe. Just remember DO NOT WASH OR GET THE POTATOES WET.

Ingredients
- 4 large russet potatoes, cut into 1/4-inch slices
- 1 gallon canola oil, room temperature
How To Make cold oil method french fries

Step 1Do not wet potatoes. Use a vegetable peeler to peel them. Cut each potato into 1/4-inch slices, then into 1/4-inch strips.

Step 2Place in a bowl - Again, do not get them wet! Add oil to a large heavy pot. Add all the potato sticks to the cold oil. Add more oil if there is not enough to cover potato sticks.

Step 3Turn the heat to high. Do not cover pot. Let oil come to a boil and boil for 15 minutes; use strainer to move the potatoes gently around. Let boil for 5 more minutes or until golden brown. Might take 10 minutes more.

Step 4When golden, scoop out with strainer and place on a parchment or towel large cookie sheet to drain, if any oil is on them. Sprinkle with salt and pepper or you favorite spice and enjoy.
