This is an Irish dish,I made it last night and Hubby Loved it!

  • 2 lb
    potatoes peeled & cubed
  • 4 slice
  • 1/2 small
    cabbage head chopped
  • 1
    onion chopped
  • 1/2 c
  • 1/4 c
    butter melted
  • ·
    salt and pepper to taste

How to Make ColCannon


  1. Put potatoes in sauce pan with enough water to cover.Bring to boil, cook till tender.15 or 20 minutes.
  2. Cook bacon in skillet till crisp,and save drippings.
  3. crumble bacon and set aside,In bacon drippings or olive oil saute onion and cabbage till soft and translucent,about 10 minutes.
  4. Drain potatoes,mash with milk,season with salt/pepper,bacon, cabbage & onions.Transfer to serving bowl,melt butter and make a well in center and pour in butter. Serves 8 Enjoy!
