How to Make COLCANNON
- When making the mashed potatoes, use the heavy whipping cream and real butter to make them. Add the two cups of collards to the mashed potato mixture. Sprinkle lightly across the top of the bowl the nutmeg and the dill weed. Mix well. Make a crater of the mashed potatoes and fill the hole with melted butter. Dip chunks of bread into mashed potatoes to eat. Or, you can just serve it in individual bowls.
