This is an Irish dish. I have also used diced potatoes instead of mashing them.

Ingredients

  • 2 pounds potatoes,peeled and quartered
  • 1 1/2 pounds cabbage,quartered and cored
  • 4 tablespoons butter
  • 1 cup milk
  • 1 teaspoon salt and pepper
  • 3 - scallions thinly sliced

How To Make colcannon

  • Step 1
    Bring to a boil in a saucepan the potatoes and cook for 15-20 minutes.
  • Step 2
    Halfway through cooking the potatoes add cabbage quarters.
  • Step 3
    Drain potatoes when done and slice cabbage into slices and set aside.
  • Step 4
    Return potatoes to the saucepan and add butter,1/2 cup milk,salt and pepper and mash.
  • Step 5
    Add remaining 1/2 cup milk and blend Then add the cabbage and mix well.
  • Step 6
    Warm on low heat and stir till just hot and garnish with scallions.
