Ingredients

3 lb
potatoes (scrubbed
2 stick
butter
1 1/4 c
milk
freshly ground black pepper (amount your choice)
1
head of cabbage, cored and chopped
1 lb
piece of ham or bacon, a day ahead of time.
4
scallions, finely chopped
chopped fresh parsley for garnish
garlic to taste

How to Make COLCANNON

Step-by-Step

  • 1Steam or boil the potatoes in skin for 30 minutes. Chop with a knife before mashing. Peel or not (your choice) Mash leaving some lumps. dd stick of the butter in pieces.
  • 2Gradually add hot milk,stirring all the time. Season with a few grinds of black pepper, add garlic to taste.
  • 3Boil the cabbage in unsalted water until it turns a darker color. Add 2 tablespoon butter leave abit crunch. Cover with lid for 2 minutes. Drain thoroughly before returning it to the pan. Chop into small pieces.
  • 4Put the ham in a large saucepan and cover with water. Bring to a boil and simmer for 45 minutes until tender. Drain, remove any fat and chop into small pieces (you can also use bacon lots of it here.)
  • 5Add cabbage, scallions, and ham to mashed potatoes, stiring them gently Serve in individual plates, Make an indentation on the top by swirling with a wooden spoon. Put one tablespoon of butter into each indentation. Sprinkle with parsley.
