This was given to me by my aunt of course it's for alot of people.

Ingredients

  • 3 pounds potatoes (scrubbed
  • 2 sticks butter
  • 1 1/4 cups milk
  • - freshly ground black pepper (amount your choice)
  • 1 - head of cabbage, cored and chopped
  • 1 pound piece of ham or bacon, a day ahead of time.
  • 4 - scallions, finely chopped
  • - chopped fresh parsley for garnish
  • - garlic to taste

How To Make colcannon

  • Step 1
    Steam or boil the potatoes in skin for 30 minutes. Chop with a knife before mashing. Peel or not (your choice) Mash leaving some lumps. dd stick of the butter in pieces.
  • Step 2
    Gradually add hot milk,stirring all the time. Season with a few grinds of black pepper, add garlic to taste.
  • Step 3
    Boil the cabbage in unsalted water until it turns a darker color. Add 2 tablespoon butter leave abit crunch. Cover with lid for 2 minutes. Drain thoroughly before returning it to the pan. Chop into small pieces.
  • Step 4
    Put the ham in a large saucepan and cover with water. Bring to a boil and simmer for 45 minutes until tender. Drain, remove any fat and chop into small pieces (you can also use bacon lots of it here.)
  • Step 5
    Add cabbage, scallions, and ham to mashed potatoes, stiring them gently Serve in individual plates, Make an indentation on the top by swirling with a wooden spoon. Put one tablespoon of butter into each indentation. Sprinkle with parsley.
